Aperitivo, the Italian wine bar from chef Brian Dodero (of the S.B. Test Kitchen pop-ups) and sommelier Andrea Girardello, throws open its doors this Tuesday night, 4-9 p.m., in the W. Haley space most recently home to Mosto. The interior and menu tell a refreshingly sophisticated story, with options such as roasted grapes with stracciatella, toasted walnuts, and thyme; salted cod mousse with Castelvetrano olives and black olive dust; and squid-ink spaghetti alla chitarra with black garlic, fermented peppers, parmigiano, and herbs. “Our menu will evolve every week, based on seasonality and what’s available at the farmers’ market,” say the co-owners. And rare for these parts, the wine list is almost entirely Italian.
