As the hot weather gives way to the changing of seasons, the menu at The Victor in Santa Ynez blossoms with the vibrant flavors of fall. Guests are invited to explore the new harvest and capture the essence of all things autumn. Whether you’re planning a cozy dinner date or a casual night with friends and family, their new fall menu is designed to create memorable alfresco moments.
Here are some highlights from the new menu. Reservations are highly recommended and can be made online via Tock. And follow The Victor on Instagram for more updates.
Immerse yourself in the taste of fall with charred king salmon, chardonnay cream sauce, and a medley of locally sourced Swiss chard, shallots, and toasted quinoa.
Perfectly seared scallops with butternut squash and celery root puree, beurre blanc, watercress, and a hint of ginger.
For vegetarian diners, The Victor offers a veggie-friendly starter featuring creamy Brie, drizzled with local honey and accompanied by a medley of charred fruit, caperberries, Marcona almonds, and olive bread.
The not-so-secret secret menu is now available in the bar area: three tacos for $15, with the selection rotating daily. Pictured above: Wagyu tri-tip carne asada tacos, with salsa quemada, onions, cilantro, and lime.

Brunch cocktails are a must. A refreshing twist on a classic favorite, the Verde Bloody Mary cocktail combines the bold flavors of Absolut Peppar vodka, tomatillos, and zesty cilantro, all brought to life with a squeeze of fresh lime juice. Garnished with succulent shrimp, crispy bacon, and all the fixings you desire, it’s the perfect blend of spice and freshness for a unique weekend brunch rendezvous.
